Remembering how this blog came to be.

Recently I read a post by another blogger that I follow Amber Dusick at Crappy Pictures (just to warn you sometimes she can be vulgar in her language) and her funeral post reminded me about our experience and how we came to help take care of my MIL especially the funeral itself.

My boys loved their grandpa (Pa). He is really the only grandpa that they remember. My dad passed when I was pregnant with my youngest and my oldest was 3. My oldest somewhat remembers my dad. Both my boys thought that my hubby's step-dad practically hung the moon. He loved being with our boys and playing in the dirt (gardening), looking through Toys R Us (shopping) or having them come over to his and grandma's house to play or just visit.

The day of his funeral we tried to help our boys prepare. Our oldest mostly just sat there and was quiet and reserved (he was 12). Our youngest cried hard (he was 8). We had a nice private viewing for the family in a room at Pa's church. Our youngest went up to the casket for viewing. I have never been able to do that. For me it is just an earthly body and my loved one is already gone. After the family time we were moved to the chapel where the casket was closed. The service progressed and then we moved to the Veteran's Memorial Cemetery for the military service and interrment. What a wonderful time where unprepared family and friends were encouraged to speak a few words. Our nephew spoke about how his grandpa loved unconditionally and showed him how much he cared. They asked if anyone else wanted to speak and my youngest said he wanted to go up there. Now let me tell you it was a struggle for me. Let my little boy talk in front of all these people? What is he going to say? What if he breaks down and I have to go up there? There was also this part of me that thought what if I refuse to let him do this? Will he ever forgive me? It's what he wants, let him do it. I did tell him to go ahead and walk up there to tell others about his Pa. He did so well and spoke about how his Pa let him talk to him about everything and he knew his Pa was special and made him feel special.

I am more aware of what I am spending and it will be nice to have a record of my purchases in the years to come (at least that is what my dear blogger friend Camille keeps reminding me).

Great Pumpkin cookies

Okay I did it I made my first double batch of Great Pumpkin cookies or as they are called in our house pumpkin chocolate chip cookies. The recipe I have is a little different than the link (I only use 1 cup oats, put chocolate chips in, do not add raisins and do not use nuts). I have had this recipe for over 20 years. I am always on the lookout for something that my family could like. (I LOVE a crunchy cookie my hubby likes soft and chewy.) These cookies are my oldest's absolute favorite. He loves to take them in his lunch and is always excited when he sees me making them.  They freeze well. In fact that is the way I keep them. They are a moist cookie and it helps to separate them with plastic wrap. Hmm I wonder how long they will last. Fall is in the air and we have had lots of rain the past two weeks. I'm sure allergies will be flaring up soon. Have a great September.

Cooking up some goodies

If you know me at all you know I love to bake. Baking to me is therapy. It is very hard during the 105 plus degree weather here in the Southwest during the months of June, July, August and on into September for me to justify heating the house to bake. So in case you haven't guessed I am in need of my therapy. (Ha ha). Seriously there are so many recipes I have been wanting to try and truthfully I have baked a few because I just couldn't wait. So I will be posting some of my favorites here soon.

My hubby's sister is gluten intolerant and since I am the unofficial baker in the family I have been looking and trying out recipes to help her enjoy more of our family feasts. Here is a recent one that we will definitely make again: Pao de Queijo-Brazilian Cheese Rolls. You can find it in this book. They are so good that my youngest ate most of them within 20 hours of making them. I had to quickly grab the bag and take them to his Auntie so she could try them (there were only 6 left out of 24). By the way I ate 3 or 4 of them.

Technology is it good or bad?

As I type this my oldest is on the other computer playing roblox (his obsession for over 4 years), the hubby is sleeping and my youngest is enjoying watching TV as he watches videos and plays games on his ipod. Technology is a huge part of our lives. I sometimes weigh whether it is good or bad for us. Today I think it is good. Rest assured we are not total tech people. We do not own smart phones and do not access the internet on our phones. We do have several devices we use at home though. It is very helpful (but sometimes frustrating too) to be able to pull up websites on our devices and find out pricing, hours and numbers to stores not to mention answers to questions that come up in conversations. Today the best thing about technology and the internet is the connections I have been able to make due to Facebook and blogs that I have come across. Facebook has allowed me to stay connected to long term friends and keep me updated with family events throughout the country not to mention keeping me posted on community events. Bloggers I follow have enriched my life with their posts. I mean it is unbelievable to me that I can have true relationships but have never even met some of these fellow bloggers. We read each others blogs and help each other live our lives with advice, compassion and love in our comments. So I just wanted to take a moment and thank those of you that read this.

I am all jumbled.

 It has been a while since I have posted about what is going on with us and our crazy lives. The hubby's mom is doing pretty good. The boys are excited for the last day of school in one week. The hubby's job has not changed and he is still struggling with despising it and not being fulfilled there along with his continued ups and downs of depression. I am just trying to keep swimming and make sure the bills get paid, everyone eats and the house stay relatively straightened. I am also trying to plan everyones birthday celebration.
Not too much has changed with the hubby's mom. She is staying on her noninflammatory diet and has lost 36 pounds. That is a blessing. It is not too difficult to cook for her. Just need to remember light on salt and sugar and no wheat. Sort of the paleo diet. I went over to see her today at my sis-in-law's (where she is when she is not with us) and brought her some clothes from her home that she had stuck in her closets. She was thrilled to find some clothes that she had forgotten about and do not just hang on her.

Our oldest will be attending band camp this summer in August and then he will start high school. It is amazing to me that almost 14 years ago I was holding this little baby (that came 6 weeks early) and now he is nearly as tall as I am and growing into a young man. Our youngest just celebrated his 10th birthday and he will be taller than his brother before too long. He reminds me so much of my brother and my hubby it is so cute but also aggravating at the same time. Oh there are some of my traits in him too. I guess that is why he gets to me so easily.

Hubby's job is at a stand still there seems to be no way to move up or across. It is very hard for him to not be able to provide like he thought he would be able to. He will not receive a raise for at least another 18 months (has already not had any for 2 years) and they are talking about another 2 percent cut. We have discussed the possibility of me finding more work (I currently help at the family business for 2 hours a day during lunch) but know that it is best for our children if I am available for them. We are making ends meet and we are thankful to our Lord that He is providing for us. Hubby keeps having lows and it is hard to not be able to help him. He is such a hard worker and to not be able to work to his full ability is very hard for him.

Well one week from today is the hubby's birthday then three days later the oldest's then 13 days later mine. Vacation Bible School is just 26 days away. Whew what a fast June it will be.

I look forward to July and some swim time and fun.

Time for a change.

Today is the start of Daylight Savings time. Like it or not we deal with it every year. As with any change there are pros and cons. In our family we have several changes going on and we are dealing with them.

Back in October my hubby put a stop to our weekly caravan over to his mom's house. Our doctor told him we needed to do what was best for our family. We want what is best for her and our family. She now comes to stay with us for a few days once or twice a month. She loves spending time with the boys and we have a room set up for her so we all have our own privacy. I know it is hard for her to go back and forth and sometimes she gets confused. It is still a process and I feel in limbo most of the time.

My brother is having some problems with his back and has three bulging discs. I will be taking him for his procedure later this month. I pray it will help him with his back pain.

My mom has recently discovered through tests that one of her valves in her heart will be in need of replacement. When we are not sure. She will have a repeat of the test to see if it is worse in about 6 months. Her aunt had the same procedure when she was 6 years older than my mom is now.

Later this week my hubby will be changing to the graveyard shift with Wednesdays and Thursdays off. This is by far the biggest change we will deal with. I am a planner and I like to know what is going to happen and when. I also like to keep to somewhat of a schedule. This shift changes a lot of things for me particularly. I usually walk with my hubby's sister at 5:30 in the mornings. Now I have to stay up late (past 9 pm) to make sure he gets up to get ready for work so I will be sleeping in. I usually grocery shop throughout the week in the mornings and take my mom with me to Albertson's every Wednesday. Not sure if we will change but will probably go back to Fridays. I will be getting my Bountiful Basket by myself on Saturdays or with my little one. It was time for me and the hubby to just be together. I will miss my all alone Monday mornings when I watch shows from ON DEMAND and wash the sheets. I will get to spend time with my hubby in the mornings and he will get to attend the little ones school programs. The boys and I will have the evenings while hubby is sleeping maybe we can do some dinners with my mom. The boys and I will have the summers late afternoons and early evenings to spend with their Auntie swimming. That will be fun. The hubby will get to spend the days with the boys during Easter break and summer. As I have said before whatever happens we will make it work. Anything worth anything takes work and our family is worth it.

Would this coupon be a budget helper or a budget buster for you? Well for me it would be a bust. I spent most of my allotted $100 before 3pm on Monday and I did not use this coupon. I did contemplate using it though but $30 on kleenex was just too much to spend this week.

Week 9 of 2013

3 weeks ago I purchased coconut oil with my Bountiful Basket. WOW! It is great!!! I have used it in place of butter or margarine (use Smart Balance usually) for peanut butter cookies, grilled cheese, frying eggs, popping popcorn, buttering pasta and toast. Here is a pic see how much I've used in these 3 weeks.

New week next week hope to pick up my oldest's fave pizza at Vons.

I have a friend that is doing this too. She has 5 to feed instead of 4 I hope she is doing better than me.

Whole Grain Pancake Mix

Over 20 years ago I bought a cookbook titiled "Shortcut Cooking - The Earth-Friendly Energy-Saving Cookbook"

There are several recipes in it that I have come to love.

This recipe make 12 cups of mix but I usually halve it because we do not eat a lot of pancakes.

8 cups whole wheat flour
2 cups nonfat dry milk
3 Tablespoons baking powder
3 cups oats (quick cooking)
2 teaspoons sugar
1 Tablespoon salt

Combine all ingredients and mix well. Store in an airtight container.

To make pancakes:

Combine 1-1/2 cups mix with 1 egg, 1-1/4 cups milk, 1 Tablespoon honey (or sugar) in bowl. Mix well. Bake on hot greased griddle. Yield 12 pancakes.

My youngest requests these often. I like them with peanut butter and maple syrup.

Willy Wonka

My hubby LOVES candy. He can remember candy from when he was a little boy and describe how he would go buy it at 7-11 or Sprouse-Ritz. One day about 6 years ago he said he would love to watch the movie "Willy Wonka and the Chocolate Factory" and eat candy the whole time. I suggested that since Valentine's day was coming up we should make that a new tradition to do with our boys. We have been following that tradition ever since. Our boys love the chance to go pick out some candy from Party City. I ask them a few weeks in advance what they would like so I can start stocking up on several varieties. We celebrate on one of the weekend days so the sugar high does not interfere with school.

Hubby - Chocolate milk, leftover pizza

Me - cinnamon donut and apple danish (bread store $2.50 for 12 and $2.89 for 4)

Oldest - 2 glazed buttermilk donuts (bread store free with full punch card) and Tyson chicken nuggets with Heinz ketchup

Youngest - powdered donut, banana and 2 pieces leftover pizza

Youngest - pumpkin muffin (Smith's clearance $1.99 for 6 large muffins)

Hubby - tomato soup with milk and saltines - stockpile do not remember but did get on sale

Me -  asparagus, popcorn

Oldest - Bariila Plus with margarine and parm cheese

Youngest - chicken noodle soup

MIL - leftover meat loaf (made with veggies from bountiful basket), asparagus, sweet potato (bountiful basket)



Dessert:

You  may have noticed my hubby likes his soda. He is a sugar fanatic. Soda everyday and candy all the time or at least as much as he can get or find. I do have a cup of coffee every morning and it is a homemade recipe for International Cafe' - Cafe' Vienna.


Breakfast:


Hubby - Chocolate milk

Me - oatmeal (2 for $4 at Albertson's) with raisins (stockpile) butter, sugar and milk

Oldest - Tyson chicken nuggets with Heinz ketchup

Youngest - leftover spaghetti with Prego


Lunch:


Hubby - Crush grape soda, Lifesavers gummies

Me - tomato stuffed with chicken salad and green beans, sweet potato, M & M's snack mix

Oldest - peanut butter sandwich, juicy juice juice box, fruit snacks, pumpkin chocolate chip cookies

Youngest - peanut butter sandwich, juicy juice juice box, fruit snacks, pumpkin chocolate chip cookie


Snack:


Oldest - Triscuits (stockpile, I think it was $2 with a $.75 off coupon)

Youngest - granola bar ($.25 for box of 8 on clearance at Kmart), grape tomatoes (Bountiful Basket), string cheese (Albertson's don't remember price but used coupon)


Dinner:

Hubby - leftover chili

Me - chicken salad and tricuits

Oldest - Barilla Plus angel hair (Target $1.89) with Albertson's brand smart balance and Kraft Parm cheese (Albertson's $3.49) - This is his favorite meal, he will eat this 9 times out of 10 for dinner.

Youngest - leftover pizza (Boboli crust bread store $3, Prego, mozz cheese, olives half a can Food 4 Less $1.38, onions Bountiful basket)


Snack:


Hubby - nothing

Me - popcorn (Alberston's brand popped in canola oil with butter and salt on top)

Oldest - popcorn, rainbow sherbet

Youngest - popcorn, rainbow sherbet with caramel sauce


I ordered some coconut oil from Bountiful Baskets and am anxious to try it with my popcorn.

What do you all eat? Sunday, February 10 2013

I do not know about you but when I watch extreme couponing or see the deals that couponers get I always wonder what do they eat? I am going to attempt to post each day what we eat and let you know where it came from and/or the cost. Just for this week. This is a typical week for us except for Valentine's Day. This picture is what my hubby bought with his $20 that I give him to get the things he really wants each week. I think the total was $7.28 used a $2 catalina. I do not include this in my weekly $100 budget. Let's call it entertainment budget since we do not go out very often.

I have very picky eaters with my hubby and oldest so some call me a short order cook.

So starting with Sunday:

Breakfast:

Me - yogurt (yoplait light very cherry) (Vons 10 for $7 but used coupons with Just 4U - can't  remember final price each) with granola cereal (Albertsons brand 2 for $4).

Hubby - Chocolate Milk

Oldest - Tyson chicken nuggets (his usual) (BOGO at Vons $7.99) with Heinz ketchup (Albertson's 2 for $4)

Youngest -donuts, yogurt, leftover Tombstone (3 for $10) pizza

Lunch:

Me - 2 scrambled eggs ($1 a dozen manager special at Albersons) with cheese and sour cream (the special buy 10 get $5 off offer $1.50 each at Albertsons) and grape tomatoes (Bountiful Basket)

Hubby - Grape soda (3 for $9.99 Albertsons)

Oldest - Ritz bitz (stockpile - I think it was a buy 4 for $8 deal) Apple juice (Albertsons 2 - 2qt bottles for $4) ocean spray fruit snacks ($1.65)

Youngest - grilled cheese (bread Food 4 Less 3 for $5, kraft amer cheese Albertsons special $1.99, margarine Albertsons brand like Smart Balance), apple juice, fruit snacks

Snack:

Me, Oldest and Youngest -  pumpkin chocolate chip cookies {homemade (cooked pumpkin from Halloween)}

Hubby - donuts

Dinner:

Me - apple pear (Bountiful Basket), Zaycon chicken - $1.69 pound cooked in olive oil.

Hubby - chili (Zaycon ground beef 3/4 of a pound - $3.29 a pound, McCormick low sodium chili mix Food 4 Less $1, 2 cans 14oz tomatoes stockpile - I think they were $.80 each, 1 can S&W low sodium kidney beans $1.50)

Oldest - Kraft mac & cheese (stockpile - I think I paid $.80, made with butter 2 for $4 at Fresh & Easy, milk Albertsons gallon $3.29 I like the flavor)

Youngest - leftover spaghetti (Anthony's $.50 with coupon at Albertsons with Prego $1 at Winco), apple

Dessert:

Oldest -  pumpkin cookies and rainbow sherbert ($3.00 Albertsons or Smith's)

Youngest -  rainbow sherbert with caramel sauce (full price on caramel sauce can't remember how much)

The boys love to see what we get and are super excited for strawberries three weeks in a row.

Read the Bible in 90 days

Have you been wondering how I am doing with reading the Bible through in 90 days/ by Easter? Well, not too good. I am only into Joshua and have read Genesis, Exodus, Leviticus, Numbers and Deuteronomy. My list shows that I am on day 16. If I was reading on schedule I should be on day 31 now and in 2Chronicles. I will check back in a few days to let you know where I am at.

That makes $129.73 but my MIL gave me $20 to help with the unexpected family dinner that came up when a distant relative came into town.


So $109.73 is not too bad. We are all a work in progress right? I know I am spending less than last year.
