Whole Grain Pancake Mix

Over 20 years ago I bought a cookbook titiled "Shortcut Cooking - The Earth-Friendly Energy-Saving Cookbook"

There are several recipes in it that I have come to love.

This recipe make 12 cups of mix but I usually halve it because we do not eat a lot of pancakes.

8 cups whole wheat flour
2 cups nonfat dry milk
3 Tablespoons baking powder
3 cups oats (quick cooking)
2 teaspoons sugar
1 Tablespoon salt

Combine all ingredients and mix well. Store in an airtight container.

To make pancakes:

Combine 1-1/2 cups mix with 1 egg, 1-1/4 cups milk, 1 Tablespoon honey (or sugar) in bowl. Mix well. Bake on hot greased griddle. Yield 12 pancakes.

My youngest requests these often. I like them with peanut butter and maple syrup.

Grr maybe I need to increase my limit to $120 since that is what I stay close to. It is quite hard when I have picky eaters and the hubby loves his junk food (candy, chips). Remember this does not count the hubby's chocolate milk or his ice cream. He drinks about 3 or 4 gallons a week at $5.15 a gallon. That comes out of his fun money ($20).

Youngest - popcorn, banana, apple danish

MIL - coffee, half a banana, scrambled egg, pineapple, cutie


Lunch:



Hubby - Crush grape soda

Me - peanut butter cookies, grape tomatoes

Oldest - triscuits

Youngest - grilled cheese, grape tomatoes, pear

MIL - deviled egg, cole slaw, apple



Snack:


Hubby, Oldest, Youngest - leftover candy




Dinner:



Hubby, Youngest, MIL - bacon and eggs,  toast for hubby, cutie for MIL

Me -  sweet potato, salad with iceberg lettuce, canned chicken (Costco kirkland), green beans and Ken's Rasp Pom lite vinaigrette dressing



Dessert:

Hubby, Me, Oldest, Youngest - leftover candy


Ok there it is a week of what we eat. Pretty normal week except for Willy Wonka day.

Willy Wonka

My hubby LOVES candy. He can remember candy from when he was a little boy and describe how he would go buy it at 7-11 or Sprouse-Ritz. One day about 6 years ago he said he would love to watch the movie "Willy Wonka and the Chocolate Factory" and eat candy the whole time. I suggested that since Valentine's day was coming up we should make that a new tradition to do with our boys. We have been following that tradition ever since. Our boys love the chance to go pick out some candy from Party City. I ask them a few weeks in advance what they would like so I can start stocking up on several varieties. We celebrate on one of the weekend days so the sugar high does not interfere with school.

What do you eat? Friday, February 15th

Breakfast:

Hubby - Chocolate milk, leftover pizza

Me - cinnamon donut and apple danish (bread store $2.50 for 12 and $2.89 for 4)

Oldest - 2 glazed buttermilk donuts (bread store free with full punch card) and Tyson chicken nuggets with Heinz ketchup

Youngest - powdered donut, banana and 2 pieces leftover pizza


Lunch:

Hubby - Crush grape soda

Me - spinach salad with bacon and hard boiled egg (bountiful basket, Ken's Raspberry Pomegranate lite vinaigrette dressing - free with coupon, Zaycon bacon $3.29 a pound, Land o Lakes cage free brown eggs $2.94 Albertsons)

Oldest - peanut butter sandwich, fruit snacks, juicy juice juice box, pumpkin chocolate chip cookies

Youngest - leftover pizza, tostitos chips, juicy juice juice box, fruit snacks, pumpkin chocolate chip cookie

MIL - spinach salad with bacon and hard boiled egg, 1 whole deviled egg and cutie (bountiful basket) Diet Dr. Pepper (4 - 12 pks for $11 Albertsons)



Snack;

Oldest - 2 glazed buttermilk donuts

Youngest - pumpkin muffin (Smith's clearance $1.99 for 6 large muffins)


Dinner:

Hubby - tomato soup with milk and saltines - stockpile do not remember but did get on sale

Me -  asparagus, popcorn

Oldest - Bariila Plus with margarine and parm cheese

Youngest - chicken noodle soup

MIL - leftover meat loaf (made with veggies from bountiful basket), asparagus, sweet potato (bountiful basket)



Dessert:

Willy Wonka night so we shared a bunch of candy. See Willy Wonka post.

Breakfast:


Hubby - Chocolate milk

Me - biscuit with rasp jelly (Albertson's 10 for $10 used coupon so $.80 a can Pillsbury Grands and jelly from bread store can't remember how much it was) egg burrito (2 eggs, sour cream & shred cheese on corn tortillas)

Oldest - biscuit, Tyson chicken nuggets and Heinz ketchup

Youngest - 2 biscuits and a banana


Lunch:


Hubby - Crush grape soda

Me -

Oldest - peanut butter sandwich, juicy juice juice box, fruit snacks, pumpkin chocolate chip cookies

Youngest - peanut butter and grape jelly sandwich, juicy juice juice box, fruit snacks, tostitos chips, pumpkin chocolate chip cookies


Snack:


Oldest - 2 donuts

Youngest - pumpkin muffin



Dinner:


Hubby - pizza (boboli pizza crust with Prego, mozz cheese, black olives & onions)

Me - pizza crust (the best part!)

Oldest - freschetta pizza ($3.99 Smith's)

Youngest - tombstone pizza with black olives added


Dessert:

Oldest - rainbow sherbet

Youngest - rainbow sherbet with caramel sauce

Oldest - peanut butter sandwich, juicy juice juice box, pumpkin chocolate chip cookies

Youngest - peanut butter and grape jelly sandwich (Welch's 2 for $4), totitos, juicy juice juice box, pumpkin chocolate chip cookies


Snack:


Hubby - banana

Me - pineapple

Oldest - banana, fruit snacks (Smith's $1.34 used $.40 off digital coupon and $.50 off  2 printed)

Youngest - fruit snacks


Dinner:


Hubby -  leftover chili

Me -  leftover chicken with sour cream and cheese in corn tortillas

Oldest - Barilla Plus angel hair with margarine and Kraft parm cheese

Youngest - leftover chicken with Heinz ketchup


Dessert:


Hubby - Chocolate milk, gum balls (Christmas gift, Yard of bubble gum from Cost Plus World Market $9.99)

Oldest -  rainbow sherbet

Youngest - rainbow sherbet with caramel sauce

What do you eat? Tuesday, February 12th

You  may have noticed my hubby likes his soda. He is a sugar fanatic. Soda everyday and candy all the time or at least as much as he can get or find. I do have a cup of coffee every morning and it is a homemade recipe for International Cafe' - Cafe' Vienna.


Breakfast:


Hubby - Chocolate milk

Me - oatmeal (2 for $4 at Albertson's) with raisins (stockpile) butter, sugar and milk

Oldest - Tyson chicken nuggets with Heinz ketchup

Youngest - leftover spaghetti with Prego


Lunch:


Hubby - Crush grape soda, Lifesavers gummies

Me - tomato stuffed with chicken salad and green beans, sweet potato, M & M's snack mix

Oldest - peanut butter sandwich, juicy juice juice box, fruit snacks, pumpkin chocolate chip cookies

Youngest - peanut butter sandwich, juicy juice juice box, fruit snacks, pumpkin chocolate chip cookie


Snack:


Oldest - Triscuits (stockpile, I think it was $2 with a $.75 off coupon)

Youngest - granola bar ($.25 for box of 8 on clearance at Kmart), grape tomatoes (Bountiful Basket), string cheese (Albertson's don't remember price but used coupon)


Dinner:

Hubby - leftover chili

Me - chicken salad and tricuits

Oldest - Barilla Plus angel hair (Target $1.89) with Albertson's brand smart balance and Kraft Parm cheese (Albertson's $3.49) - This is his favorite meal, he will eat this 9 times out of 10 for dinner.

Youngest - leftover pizza (Boboli crust bread store $3, Prego, mozz cheese, olives half a can Food 4 Less $1.38, onions Bountiful basket)


Snack:


Hubby - nothing

Me - popcorn (Alberston's brand popped in canola oil with butter and salt on top)

Oldest - popcorn, rainbow sherbet

Youngest - popcorn, rainbow sherbet with caramel sauce


I ordered some coconut oil from Bountiful Baskets and am anxious to try it with my popcorn.

Youngest - peanut butter sandwich, juicy juice box, fruit snacks, tostitos chips (stockpile), donut


Snack:

Me - M & M's snack mix (Target clearance $1.38)

Youngest - M & M's snack mix, grape tomatoes, yogurt


Dinner:

Hubby - leftover chili and mac & cheese

Me -  sweet potato and apple (Bountiful Basket)

Oldest - leftover mac & cheese

Youngest - leftover mac & cheese

What do you all eat? Sunday, February 10 2013

I do not know about you but when I watch extreme couponing or see the deals that couponers get I always wonder what do they eat? I am going to attempt to post each day what we eat and let you know where it came from and/or the cost. Just for this week. This is a typical week for us except for Valentine's Day. This picture is what my hubby bought with his $20 that I give him to get the things he really wants each week. I think the total was $7.28 used a $2 catalina. I do not include this in my weekly $100 budget. Let's call it entertainment budget since we do not go out very often.

I have very picky eaters with my hubby and oldest so some call me a short order cook.

So starting with Sunday:

Breakfast:

Me - yogurt (yoplait light very cherry) (Vons 10 for $7 but used coupons with Just 4U - can't  remember final price each) with granola cereal (Albertsons brand 2 for $4).

Hubby - Chocolate Milk

Oldest - Tyson chicken nuggets (his usual) (BOGO at Vons $7.99) with Heinz ketchup (Albertson's 2 for $4)

Youngest -donuts, yogurt, leftover Tombstone (3 for $10) pizza

Lunch:

Me - 2 scrambled eggs ($1 a dozen manager special at Albersons) with cheese and sour cream (the special buy 10 get $5 off offer $1.50 each at Albertsons) and grape tomatoes (Bountiful Basket)

Hubby - Grape soda (3 for $9.99 Albertsons)

Oldest - Ritz bitz (stockpile - I think it was a buy 4 for $8 deal) Apple juice (Albertsons 2 - 2qt bottles for $4) ocean spray fruit snacks ($1.65)

Youngest - grilled cheese (bread Food 4 Less 3 for $5, kraft amer cheese Albertsons special $1.99, margarine Albertsons brand like Smart Balance), apple juice, fruit snacks

Snack:

Me, Oldest and Youngest -  pumpkin chocolate chip cookies {homemade (cooked pumpkin from Halloween)}

Hubby - donuts

Dinner:

Me - apple pear (Bountiful Basket), Zaycon chicken - $1.69 pound cooked in olive oil.

Hubby - chili (Zaycon ground beef 3/4 of a pound - $3.29 a pound, McCormick low sodium chili mix Food 4 Less $1, 2 cans 14oz tomatoes stockpile - I think they were $.80 each, 1 can S&W low sodium kidney beans $1.50)

Oldest - Kraft mac & cheese (stockpile - I think I paid $.80, made with butter 2 for $4 at Fresh & Easy, milk Albertsons gallon $3.29 I like the flavor)

Youngest - leftover spaghetti (Anthony's $.50 with coupon at Albertsons with Prego $1 at Winco), apple

Dessert:

Oldest -  pumpkin cookies and rainbow sherbert ($3.00 Albertsons or Smith's)

Youngest -  rainbow sherbert with caramel sauce (full price on caramel sauce can't remember how much)

Totally over again. The boys all know that I am working to do this and I am not buying some things. It is easier for me to go without than to tell them no, I cannot get this. It is especially hard to tell the hubby no. He has sacrificed so much career wise to provide for us. I sure am loving Bountiful Baskets. That is usually all of our produce for a week. The boys love to see what we get and are super excited for strawberries three weeks in a row.
